BBQ Pulled Pork Sandwich

Ingredients
  

  • 3 lbs pork shoulder boneless
  • 1 1/2 cups BBQ sauce store-bought or homemade
  • 1 large onion sliced
  • 1/2 cup chicken broth
  • 6 hamburger buns toasted
  • Optional: coleslaw for topping

Pulled Pork Rub:

  • 1 tbsp brown sugar
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper optional
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions
 

  • Prepare the rub by mixing together brown sugar, paprika, garlic powder, onion powder, cayenne (if using), salt, and pepper. Rub the mixture all over the pork shoulder.
  • Place the sliced onions in the bottom of the slow cooker and lay the pork shoulder on top.
  • Add chicken broth to the slow cooker, cover, and cook on low for 6-8 hours (or high for 4-5 hours) until the pork is tender and easily pulls apart.
  • Once cooked, remove the pork and shred it with two forks.
  • Mix the pulled pork with BBQ sauce in a large bowl, making sure all the pork is coated.
  • Toast the buns in a skillet or toaster (optional).
  • Assemble the sandwiches by placing a generous amount of BBQ pulled pork on the bottom bun, top with coleslaw (optional), and finish with the top bun.
  • Serve hot with additional BBQ sauce on the side if desired.
